Ground Elk Slow Cooker Recipes

So we know we have been posting a metric crap ton of dessert and treat recipes lately but bear with us because it is that time of year and we are also way more creative with baked goods when we're stressed.  We think it is our inner food monster craving sweets and chocolate so we justify it to ourselves by saying we're being creative for all of you.

It is ok though, we have figured out a remedy: We make these desserts, we taste one, and then we deliver the rest to one of the Crossfit gyms near us or our friend's coffee shop and voila, we are safe and you are satisfied.  If we didn't do that, we would all look like Ben Stiller at the end of dodgeball (if you don't get that reference, you should find it).

Anyways, this one is not a dessert, but a DELICIOUS chili that you can substitute the elk with some ground beef or bison or any combination you choose.  Either way, it will be delicious.  Also, just to answer a question in advance, we got this Elk from our friends at Cook Pigs Meat.

Spicy Elk Chili

If you're also experiencing high levels of stress during this time of the year, we have implemented new ways to combat it that might help you as well:

1.  All electronics off 1 hour before you plan on falling asleep.

2.  Read for at least 30 minutes per day (because we can not have our brains turning to mush and need to continue to learn big words to entertain you all).

3. We are going to take our own advice on food which means as much as we love eating meat and bacon, we need to eat more veggies. So thanks to our friend Mark Sisson, we will be implementing a HUGE, savory salad into our meals daily and we just so happen to have found an amazing Paleo Salad dressing company that we will utilize.  You can find Tessemae's HERE.

Spicy Elk Chili

Prep Time 20 mins

Cook Time 1 hr

Total Time 1 hr 20 mins

  • 1 pound ground elk meat ground beef
  • 2 zucchini peeled and diced
  • 2 bell peppers diced
  • 1 onion peeled and diced
  • 1 8 ounce can tomato sauce
  • 1 14.5 ounce can fire-roasted tomatoes
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne leave out if you want mild
  • 1 teaspoon oregano
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 cinnamon stick

Stovetop

  • Preheat a dutch oven or large stock pot over medium heat

  • Add in a cooking fat of your choice, like always we used 3 tablespoons of bacon fat

  • Add in your onions and sweat them for about 10 minutes or until translucent

  • Add in your peppers and zucchini and sauté for another 5 minutes

  • Stir in your ground elk meat and all the spices and mix well, stir every minute or so for 7-9 minutes until your elk is cooked

  • Add your tomato sauce, fire-roasted tomatoes, and cinnamon stick and stir well

  • Reduce heat to low, cover and let simmer for at least 45 minutes

  • Serve hot and enjoy

Crockpot

  • Combine all the above ingredients in your crock pot and mix well

  • Turn on low and let cook for 8 hours

  • Serve and enjoy
